Kale Chips

This last week I ran across a recipe posted on Mark’s Daily Apple for Kale Chips.  I thought today I would try my hand at creating them.  Below are the pictures. They turned out pretty good considering that I overcooked them by 20 minutes and used to much salt. They had a surprising crispness to them which really surprised me on first bite.  On a positive note, the wife loved them and wants me to make them again.

For those unaware (like I was), kale, a form of cabbage,  is a highly nutritious vegetable with powerful antioxidant properties and is also very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium.  That’s fancy talk for “Kale is really good for you”.
