Almond Flour Pancakes

This morning I made some Almond Flour pancakes from a recipe that I found on Mark’s Daily Apple. Although they weren’t too bad, they were definitely not what I was expecting. That didn’t stop me from  eating them all along with the batch I made for my wife though. I figured at 40grams of protein, I couldn’t go wrong and I didn’t think they tasted too bad. My wife thought they tasted like a protein bar and that was why I liked them. She is usually right and this time was no exception. They did taste like a protein bar.  Maybe I should call them Almond Flour Protein Bars. I could then add chocolate.

Here is the recipe if anyone would like to give it a try.

  • 1 cup almond meal
  • 3 large eggs
  • 1/8 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • Mix together.
  • Pour batter onto a buttered or greased skillet.
  • Cook over medium heat until both sides are golden brown.
  • Calories:   798
  • Fat:   65.4 g
  • Carbs:   20.1 g (11.2 g fiber)
  • Protein:   42.1 g

      I am not a huge fan of coconut but the chocolate sounds pretty good!
