Protein Muffin Loaf

Protein LoafI made this Protein Muffin Loaf Monday night after I made my kids some chocolate muffins of their own.  I figured as long as the oven was on and hot, I might as well use it.  Overall they came out pretty well, albeit, a little on the dry side.  I think that might be because of the pancake batter that I used. If anyone has any suggestions on how to get it moist, please let me know.

Here is what I put in the recipe:

  • 2 tbsp of Chocolate chips Semi-Sweet
  • 1/2 cup of Blueberries
  • 1 tbsp of Musselman’s Natural Unsweetened Apple Sauce
  • 3 scoops of Whey Protein Powder, chocolate
  • 4 tsp of Hershey’s Cocoa Powder
  • 1 Egg
  • 1 cup of 2 percent Reduced Fat Milk
  • 1 cup of Gluten Free Pancake Mix
2 servings of Chocolate chips Semi-Sweet
0.5 servings of Blueberries
1 serving of Musselmans Natural Unsweetened Apple Sauce
3 servings of Whey Protein Powder, chocolate
1 serving of Hershey’s Cocoa Powder
1 serving of Egg
2 servings of 2 percent Reduced Fat Milk
4 servings of Gluten Free Pancake Mix

I did the best I could on the calculation and here is what I determined the nutritional factor to be. The above ingredients yielded 8 loafs.
