On the weekends and holidays I like to make pancakes for the family. The kids get some quick ones from a Jiffy box. The wife gets gluten free and I have been making myself primal pancakes. Today, here is what I did.
- 1 cup Almond Flour
- 2 large eggs
- 1 tablespoon pure apple sauce (not sure if this is primal)
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla extract
I scooped it onto the griddle in small doses and cooked about 5 minutes on each side. I topped them off with some homemade blueberry syrup (microwaved blueberries blended with a tablespoon of honey) and real butter.
