Almond Crusted Tilapia

Today was Daddy/Daughter day. We did everything from going to the gym, going to the library, sledding in 5 degree weather, and playing the Wii Fit for an hour. For dinner, I decided to give the girls the choice for what we ate. My oldest had the best suggestion for what we had on hand. She asked for the crunchy fish that I make but nothing too salty or spicy.  Easy enough!  I decided to make them Almond Crusted Tilapia.  Here’s how:

  • 4 Tilapia fillets
  • 2 Eggs, beaten
  • 1 Cup Almond Flour
  • 1 Teaspoons Sea salt
  • 3 Teaspoons of a no salt fish seasoning (I used one by Mrs. Dash)
  • 2 Teaspoons dry mustard
  • 1/4 Cup(s) Coconut Oil (per 2 fillets)

Heat the oil a large pan over medium-high heat.  Put the beaten eggs in one bowl and the almond flour plus seasonings into another bowl. Dip each fillet in the egg mixture, then in the almond flour mixture. Cook the Tilapia in two batches until it is golden on each side.

It turned out better than I expected. My oldest daughter ate 2 fillets by herself!  For a side dish, I made them some rice. For myself, I had a side salad with sunflower seeds and vinaigrette dressing.  No cheese. My meal was entirely primal.
