Almond Butter Pumpkin Brownies

I decided to make a small treat for myself tonight but I wanted it to be healthy and part of the Primal diet.  To the ‘net I went in search of the perfect primal treat. I came upon thisprimallife.com and this Almond Butter Pumpkin Brownie recipe.

The recipe itself is incredibly easy to make assuming you have all the ingredients. I did not. So at lunch today I headed to my local Hyvee and picked up some Almond Butter and pumpkin mix.  Cost was about 6 dollars for both. The other ingredients I had on hand.  Here is how you make them.

Ingredients:

  • 1 cup almond butter
  • ¾ cup mashed pumpkin
  • 1 egg
  • 1/3 cup honey
  • 1 tsp baking soda

Combine all ingredients in a bowl.  Mix well.  Pour into a greased 8 x 8 ( I used 9×9) in pan.  Bake at 350 degrees for 25 minutes or until a toothpick inserted comes out clean.  Serves 8.

Upon first taste I felt they were a tad dry but overall the taste was really good.  I quickly thought of other things to add that might entice the flavor ( I am thinking some dark chocolate chunks).

Its great recipes like this that will help me to stick to my new primal lifestyle.

    Interesting. I have some almond butter sitting in my fridge and have been wanting a new way to use it (I hated the taste of it on it’s own). I will probably make these this weekend and let you know what I think. =)

      I think some small dark chocolate chips would help to add a little bit of texture and taste to it. But overall they tasted really good! Let me know what you think.

    I made this batter and dropped it into a muffin pan and they were heavenly; both my wife AND the 6yo son loved them

      The muffin pan idea is a great one. My wife and kids love this as well. Last time I made it, I put some dark chocolate in it and a dark chocolate frosting. Not as healthy but let me tell you…awesome!
