I bought a bag of almonds from the grocery store this afternoon. They were raw and quite good but about half way through the bag I thought it would fun to try and experiment with them. So when I got home I grabbed a handful of ingredients and ended up making some cinnamon almonds.
Recipe: Cinnamon Almonds
Ingredients
- 1 cup raw almonds
- 1 tablespoon olive oil
- 2 tablespoons agave nectar
- 1 tablespoon cinnamon
- 3 packets of sweet and low
- 1 teaspoon of sea salt
Instructions
- Mixed it all in a bowl, cooked for 10 minutes at 350 degrees and called it good. They came out with a nice blend of sweet and salty. If I make them again, I may cut the the salt down to 1/2 teaspoon though.
Variations
Honey could be used in place of the agave nector
Cooking time (duration): 10
Number of servings (yield): 4
Meal type: snack

I am not sure if these would qualify for primal or paleo but you could probably modify it easy enough to make it comply.

You are absolutely correct. Agave nectar is not much better than HFCS. In fact, its made almost the exact same way. Agave Syrup is “low glycemic” which has its benefits if you are concerned about an increase in blood sugar. Based on my new approach to “natural” eating, I am trying to phase it out of my diet completely. With that said, I also have a hard time throwing something away that I spent good money on so I will continue to use it until its gone.
Have you considered using Stevia as the sweetener, as opposed to Sweet n’ Low or Agave? Stevia has a super high sweet factor with 0 glycemic value, and it comes from a naturally growing herb. Great stuff, definitely more paleo friendly.
Great question. When I started to make this, I swore I had Stevia in the pantry but all I could find was Sweet n Low so that is what I ended up using. I was hoping it would add a bit of a crust to the nut sort of like a candied nut.
I am not a huge fan of Agave either but I was also out of honey.
