<p>Ashley and I have been experimenting a lot lately with cauliflower, mainly as a substitute in our Sweet and Sour chicken.  Last night I got the itch to make some fried rice with it.  I set out on a search of the Internet and found a few that I thought would be good but I didn&#8217;t have all of the required ingredients. So I did what I do best and improvised.  The end result came out awesome and there wasn&#8217;t much left of it afterward. I figure there was probably enough there to feed a family of 4 but it was so good that I couldn&#8217;t resit eating most of myself.   Here is what I did.</p>

<li class="ingredient">2 clove garlic</li>

<li class="ingredient">1 teaspoon of paprika</li>
<li class="ingredient">3 tablespoons gluten free soy sauce</li>
<li class="ingredient">1/2 cup frozen peas</li>

<li>I started out by chopping the the cauliflower, onions, and garlic cloves using our Vidalia Chop Wizard. If you don’t have one of these, you need to get one. It makes chopping vegetables so much easier than by hand and the cleanup is painless.  After chopping I cooked the ingredients in a large pain along with some coconut oil for about 5 minutes. At about 3 minutes into that, I added the frozen peas, soy sauce and paprika.</li>
<li>At the 5 minute mark I moved the mixture to the side and added 3 whole eggs. I made sure to break up the yokes a bit and allowed it all to cook. Once the eggs where cooked but still soft, I mixed them in with the rest of the cauliflower mixture that has been set aside in the pan. I let it cook for a few more minutes and then promptly removed from the heat. The key to all of this is to continuously stir the mix or it will burn to the bottom of the pan.</li>

<p>My wife commented that it was really good and suggested maybe adding some chicken in next time. That is a great idea and would really add some protein to it and could really make it a meal by itself. I actually served this particular one with some almond encrusted tilapia.</p>

Fun Night usually consists of the kids making their own form of pizza (English muffins, sauce, cheese, pepperoni, etc). My wife and I will usually make a gluten free version for ourselves. Lately that option has also been primal (consisting of almond flour).  We missed last weeks fun night because of unforeseen circumstances so we decided to make up for it on Friday.</p>
<p>While the kids ate their pizza, I decided to do something different for the wife and I (mainly because I had no almond flour for crust). Since this was last minute and I was short on time, I put some ground beef in the microwave to defrost.  A few minutes later, I took it out, drained the excess grease into one pan and threw the beef into another. While the beef was cooking, I cut up an onion and threw it into the hamburger grease and put a spaghetti squash into the microwave to cook.</p>

<p>After the onions, hamburger, and squash were all done cooking, I set out to make my lasagna. Since my spaghetti squash was small and my pan large, I decided to use a meatloaf pan instead of a typical 9&#215;9 baking dish.</p>
<p>I put my first layer of squash down on the bottom.</p>

<p>This would be considered Primal because of the cheese but not Paleo for the same reason. Lose the cheese and gain the Paleo tag.  Easy enough.</p>

			<content:encoded><![CDATA[<p>Today was Daddy/Daughter day. We did everything from going to the gym, going to the library, sledding in 5 degree weather, and playing the Wii Fit for an hour. For dinner, I decided to give the girls the choice for what we ate. My oldest had the best suggestion for what we had on hand. She asked for the crunchy fish that I make but nothing too salty or spicy.  Easy enough!  I decided to make them Almond Crusted Tilapia.  Here&#8217;s how:</p>
<ul>
<li>4 Tilapia fillets</li>
<li>2 Eggs, beaten</li>
<li> 1 Cup  Almond Flour</li>
<li> 1 Teaspoons  Sea salt</li>
<li>3 Teaspoons of a no salt fish seasoning (I used one by Mrs. Dash)</li>
<li>2 Teaspoons dry mustard</li>
<li> 1/4 Cup(s)  Coconut Oil (per 2 fillets)</li>
</ul>
<p>Heat the oil a large pan over medium-high heat.  Put the beaten eggs in one bowl and the almond flour plus seasonings into another bowl. Dip each fillet in the egg mixture, then in the almond flour mixture. Cook the Tilapia in two batches until it is golden on each side.</p>
<p>It turned out better than I expected. My oldest daughter ate 2 fillets by herself!  For a side dish, I made them some rice. For myself, I had a side salad with sunflower seeds and vinaigrette dressing.  No cheese. My meal was entirely primal.</p>

			<content:encoded><![CDATA[<p>Yesterday I ran across a meatloaf recipe on <a href="http://www.marksdailyapple.com">Mark&#8217;s Daily Apple</a> and knew right away that I wanted to make it that evening.  So after gathering the necessary ingredients at the store, I set forth.  I modified the recipe a tad in order to make enough for supper and lunch the next day.</p>
<p><span style="text-decoration: underline;"><strong>Ingredients:</strong></span></p>
<ul>
<li>2 pounds ground beef ( I used 80/20 ground chuck)</li>
<li>2 apples, peeled, cored and chopped (I used Gala and diced them)</li>
<li>1 onion, chopped</li>
<li>2 clove garlic, minced</li>
<li>2 tsp dried mustard powder</li>
<li>4 tbsp Worcestershire sauce</li>
<li>2 eggs</li>
<li>Salt and pepper to taste ( I used sea salt)</li>
</ul>
<p>In a large bowl, combine all ingredients and mix.  Press mixture into a  loaf pan and bake at 375 degrees for about 60 minutes. The meatloaf pan that I have is actually 2 parts.  You have the part that the meat mixture goes into and it has holes in the bottom. That pan then sits inside a slightly larger pan that collects the grease from the meat.  Its like a George Foreman grill for the oven!  Overall the meatloaf turned out really good.  My wife continuously complimented me on it and asked that I add it to our recipe database.  One thing we thought about adding was a layer of tomato paste on the top about 30 minutes into the cooking cycle.</p>
<p>I served the meatloaf with a side of carrots and a spinach leaf salad with a vinaigrette dressing and sunflower seeds. To wash it down we enjoyed a glass of Riesling wine. For dessert we each had 2 squares of dark chocolate.  It was a perfect meal!</p>

			<content:encoded><![CDATA[<p>I came home last night in search of a burger.  Not having the time to defrost some beef I took to the pantry in hopes of finding something else.  I came across two cans of tuna and wondered how easy it would be to turn those into some that resembled a burger.  It was pretty simple.</p>
<p>Ingredients.</p>
<ul>
<li>2 cans of tuna</li>
<li>1 egg</li>
<li>Garlic Salt (to taste)</li>
<li>Onion Powder (to taste)</li>
</ul>
<p>I dumped all the ingredients into a bowl and mixed away.  Once the eggs was completely mixed in and the spices had been added, I dumped the meat onto a skillet that had been warming with a little olive oil.  About 3 minutes on each side and I had a delicious burger ready for my taste buds.  I put some white corn tortilla&#8217;s in the toaster oven to act as my bun, and poured a little salsa on the top to act as my ketchup.</p>
<p>Overall the burger tasted really good. I was nice enough to save one for my lovely wife and she equally enjoyed the burger.  If I decide to make these again, I may try a better quality tuna or attempt to drain out some more water. As you can see from the pictures, they got a little sloppy until they were cooked.</p>
