I went into this Christmas and New Year’s season with the desire to eat healthy and continue my workouts. I managed to do that to a degree. I did let myself enjoy the good food around me but I think I managed to keep my portion control under check. I entered the holiday at 18olbs and 13% body fat. On January 2nd, my weight was 181lbs and my body fat was 13.3%. I consider that a mild success!!
One of my goals for the new year was to eat 100% natural and primal. Its now January 4th and so far I have succeeded in that. I have even dropped down to 179lbs. My workouts have been sparse this last week. I did manage to get to the gym on Saturday with the kids but yesterday I was off and today doesn’t look very good either. I am hoping the rest of the week pans out. We shall see.
I will make sure I keep everyone up to speed on how the Primal lifestyle works out. As a benchmark, I started the new year at 181 and 13.3% body fat. Lets see where I go from there!

Today was Daddy/Daughter day. We did everything from going to the gym, going to the library, sledding in 5 degree weather, and playing the Wii Fit for an hour. For dinner, I decided to give the girls the choice for what we ate. My oldest had the best suggestion for what we had on hand. She asked for the crunchy fish that I make but nothing too salty or spicy. Easy enough! I decided to make them Almond Crusted Tilapia. Here’s how:
- 4 Tilapia fillets
- 2 Eggs, beaten
- 1 Cup Almond Flour
- 1 Teaspoons Sea salt
- 3 Teaspoons of a no salt fish seasoning (I used one by Mrs. Dash)
- 2 Teaspoons dry mustard
- 1/4 Cup(s) Coconut Oil (per 2 fillets)
Heat the oil a large pan over medium-high heat. Put the beaten eggs in one bowl and the almond flour plus seasonings into another bowl. Dip each fillet in the egg mixture, then in the almond flour mixture. Cook the Tilapia in two batches until it is golden on each side.
It turned out better than I expected. My oldest daughter ate 2 fillets by herself! For a side dish, I made them some rice. For myself, I had a side salad with sunflower seeds and vinaigrette dressing. No cheese. My meal was entirely primal.

On the weekends and holidays I like to make pancakes for the family. The kids get some quick ones from a Jiffy box. The wife gets gluten free and I have been making myself primal pancakes. Today, here is what I did.
- 1 cup Almond Flour
- 2 large eggs
- 1 tablespoon pure apple sauce (not sure if this is primal)
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla extract
I scooped it onto the griddle in small doses and cooked about 5 minutes on each side. I topped them off with some homemade blueberry syrup (microwaved blueberries blended with a tablespoon of honey) and real butter.

Yesterday I ran across a meatloaf recipe on Mark’s Daily Apple and knew right away that I wanted to make it that evening. So after gathering the necessary ingredients at the store, I set forth. I modified the recipe a tad in order to make enough for supper and lunch the next day.
Ingredients:
- 2 pounds ground beef ( I used 80/20 ground chuck)
- 2 apples, peeled, cored and chopped (I used Gala and diced them)
- 1 onion, chopped
- 2 clove garlic, minced
- 2 tsp dried mustard powder
- 4 tbsp Worcestershire sauce
- 2 eggs
- Salt and pepper to taste ( I used sea salt)
In a large bowl, combine all ingredients and mix. Press mixture into a loaf pan and bake at 375 degrees for about 60 minutes. The meatloaf pan that I have is actually 2 parts. You have the part that the meat mixture goes into and it has holes in the bottom. That pan then sits inside a slightly larger pan that collects the grease from the meat. Its like a George Foreman grill for the oven! Overall the meatloaf turned out really good. My wife continuously complimented me on it and asked that I add it to our recipe database. One thing we thought about adding was a layer of tomato paste on the top about 30 minutes into the cooking cycle.
I served the meatloaf with a side of carrots and a spinach leaf salad with a vinaigrette dressing and sunflower seeds. To wash it down we enjoyed a glass of Riesling wine. For dessert we each had 2 squares of dark chocolate. It was a perfect meal!

Its that time of year again to make New Year’s resolutions. I don’t remember making any last year. If I did, I am not sure that I followed them. This year is going to be different. It has to be different. I have achieved great strides in my health over the last couple years and I think its time to take things to the next level. Here is what I have in mind.
- Reduce my sodium intake to the recommended values of 1400mg a day.
- I will not eat anything that is not 100% natural. That means if I cannot pronounce it, I will not eat it.
- Consume only organic foods (this will be hard)
- Track my daily food intake for all the world to see
- Track my daily workouts for all the world to see.
- I want to directly help at least one person achieve their fitness goals.
- Go Primal with my eating. ( I am looking forward to this one the most)
Notice that I have nothing in my resolutions about losing weight? I am not looking to lose any weight this year. Rather, I would like to make my self healthier; from the inside out. This is the year to do it. I am not getting any younger.
